Élevage: spontaneously acidified, then spontaneously fermented and matured in neutralized sauvignon blanc 229L vosges and troncais oak barrels for eight months before receiving fruit. four barrels received two hundred pounds each of NY hudson valley balaton cherries and one barrel received two hundred pounds of PA delaware valley montmorency cherries. refermented and conditioned for two and a half months in the barrel before racking off of the fruit

Élevage: spontaneously acidified, then spontaneously fermented and matured in neutralized sauvignon blanc 229L vosges and troncais oak barrels before racking onto spent cherries and new raspberries for a three and a half month refermentation and maceration
Fruit: second-use 2017 harvest NY hudson valley balaton cherries and PA delaware valley montmorency cherries and nj raspberries
