Ingredients: air, water, pilsner malt, raw wheat, 2009 sterling hops, 2010 crystal hops
Élevage: a blend of the contents of two cognac puncheons. one, brewed in november 2016, was spontaneously fermented and aged in a neutral french oak puncheon for sixteen months prior to racking into a cognac puncheon where it aged for additional five months before blending. the other cognac puncheon was brewed in december of 2017 and fermented spontaneously in the cognac puncheon from which it was blended. blended in equal proportion for an average age of fifteen months at bottling.
