Élevage: spontaneously acidified, then spontaneously fermented and matured in two neutralized sauvignon blanc 229L vosges and troncais oak barrels and two second-use buffalo trace rye whiskey barrels. after over a year in the neutral wine barrels, that portion was racked into two freshly dumped heaven hill bourbon barrels for an additional four months of wood and spirit extraction. sixteen-and-a-half months average age at bottling.

Élevage: spontaneously acidified, then spontaneously fermented and matured in three neutralized sauvignon blanc 229L vosges and tronçais oak barrels, racked into three nj apple brandy barrels, two of which held apple cider following brandy maturation. finished for six to ten months in the apple brandy barrels; an overall blend of one- and two-year-old beer
