Ingredients: air, water, pilsner malt, raw wheat, malted wheat, 2010 crystal hops, 2012 cascade hops, cherries

Élevage: (all threads declassified Berliner Messe, i.e. spontaneously fermented pale wheat ale). one thread brewed in november 2016 spontaneously fermented in a 225L red wine barrel, two threads brewed in may 2018, one of which aged in a neutral french oak 229L barrel, the other in a second-use port 229L barrel, and two threads brewed in november 2017 which briefly spontaneously fermented in neutral oak before racking in february 2018 to two port barrels which then held rye whiskey. threads were partially woven upon racking onto the spent cherries in three puncheons, two of which were cognac casks, and all were ultimately blended together into IBC for bottling

Élevage: mont sainte-victoire grist brewed in the fall of 2019, spontaneously fermented in open top stainless, then continued fermenting and aging in neutral oak puncheons, racked onto spent cherries in another puncheon in the summer of 2020 for a year-long maceration before racking to stainless for bottling

Élevage: brewed in january 2021, spontaneously fermented in neutral oak puncheons, racked after two months onto “spent” cherries in separate puncheon and left to continue fermenting and macerating for another seven months (nine months total age at bottling)
