Élevage: spontaneously acidified, then spontaneously fermented and matured in neutralized sauvignon blanc 229L oak barrels and port barrels for between three and twenty-four months

Élevage: spontaneously acidified, then spontaneously fermented and matured in neutral oak barrels from four berliner messe brewing seasons (three total brewing seasons): spring 2016, fall 2016, spring 2017, fall 2017. the fall 2016 and spring 2017 components were aged entirely in port barrels, one of which was designated "LBBL", composed of four consecutive batches of wort: two pale and two golden (without spontaneous pre-acidification). the average age at bottling is eighteen months.

Élevage: spontaneously acidified, then spontaneously fermented and matured in neutral oak barrels from four “true” brewing seasons: spring 2016, spring 2017, fall 2017, fall 2018. the spring 2017 component came from a port barrel, with the other three sourced from neutralized 229L barrels of exceptional character (and, in the case of the spring 2016 contribution, exceptional age). the average age at bottling is twenty-two months.

Ingredients: air, water, NJ raw wheat, NJ pilsner malt, 2010 crystal hops, 2012 tettnang hallertauer mittelfruh, honey

Élevage: brewed in the fall of 2016 & 2018 and spring of 2020, spontaneously acidified, then spontaneously fermented and matured in neutral oak barrels. the older components were blended together into a 500L single port puncheon and the younger component fermented and aged in a 400L second-use cognac puncheon. an average age of 27 months at bottling.

Élevage: brewed in the fall of 2018, spring of 2019, and beginning of 2021, spontaneously acidified and fermented in neutral oak barrels and puncheon. the oldest component was a split barrel of Berliner Messe & golden ale designated “BL”.
