Élevage: spontaneously fermented in a single 500L french oak chardonnay puncheon for seven months, then racked into a single 225L nevers oak twenty year old port barrel and rested for another ten months (seventeen month total age) before bottling from gravity from the barrel

Ingredients: air, water, NJ pilsner malt, NJ raw wheat, 2009 sterling hops

Élevage: spontaneously fermented in a single 400L cognac cask, racked after 18 months to stainless for one month of settling before racking & bottling by gravity
