Cellaring potential: 8-18 years

Ingredients: air, water, raw wheat, pilsner malt, malted wheat, 2010 crystal hops, 2016 NJ chambourcin grapes

Élevage: spontaneously acidified, then spontaneously fermented and matured in neutralized sauvignon blanc 229L vosges and tronçais oak barrels for five months. transferred to 225L/229L port barrels for an additional three month refermentation with chambourcin grape must, followed by one month settling in stainless steel
Fruit: 2016 NJ chambourcin grapes harvested, crushed, destemmed, and added to barrels of beer the same day

Ingredients: air, water, raw wheat, pilsner malt, malted wheat, 2010 crystal hops, 2017 NJ montepulciano grapes

Élevage: spontaneously acidified, then spontaneously fermented and matured in neutralized sauvignon blanc 229L vosges & tronçais barrels, as well as 225L nevers port barrels. blended in stainless from our most prized barrels from every age to become blend one credo, then racked to a hungarian oak 400L puncheon. montepulciano grapes were crushed and destemmed and added to two neutral 229L barrels, then topped up with the credo extension and left to referment and macerate for five months.

Cellaring potential: 8-25 years

Ingredients: air, water, NJ raw wheat, NJ pilsner malt, 2010 crystal hops, 2019 NJ chambourcin grapes, petite sirah & cabernet franc pomace

Élevage: spontaneously acidified, then spontaneously fermented and matured in neutralized french oak barrels, racked onto chambourcin grape must (crushed, destemmed in-house) in open stainless for refermentation, to which was added pomace fresh from the press of Unionville Vineyards of petite sirah and cabernet franc. racked into grenache puncheons for an additional five months
Fruit: 2019 NJ chambourcin grapes harvested, crushed, destemmed, and added to barrels of beer the same day

Dosage: NJ blueberry honey

Ingredients: air, water, NJ raw wheat, NJ pilsner malt, 2010 crystal hops, 2020 NY Petit Verdot grapes

Élevage: spontaneously acidified, then spontaneously fermented and matured in a neutralized french oak puncheon (that which held last year’s Sanctus), racked onto Petit Verdot grape must (crushed, destemmed in-house) in stainless for refermentation. racked into third-use Oloroso cask and glass demijohn for an additional nine months
Fruit: 2020 North Fork Long Island Petit Verdot grapes

Dosage: NJ blueberry honey
