Ingredients: air, water, pilsner malt, raw wheat, 2009 sterling hops, NY balaton cherries

Élevage: spontaneously fermented and matured in a 500L french oak puncheon for eight months, before the addition of fresh whole hudson valley balaton cherries, subsequent spontaneous fruit refermentation and seven month maceration period. racked off of cherries and barrel rested for an additional three months before final racking and bottling.
Fruit.: freshly harvested (never frozen) ripe NY balaton cherries from 2017 harvest, destemmed & triaged by hand

Fruit.: freshly harvested (never frozen) ripe NY balaton cherries from 2017 harvest, destemmed & triaged by hand. slightly higher proportion of fruit than in other 2017 harvest blends.
